I am the Director of Food Service and Sustaibility Officer at one of the largest homeless shelters in Michigan. We recently began planning and executing Zero-Waste events as part of our mission to green our food service and our building and after 2 very large_ but very sucessful_ events I can say by far the only difficulty lies in educating staff and volunteers the rest is easy to do.
